Puttanesca sauce
2-3 tablespoons olive oil
½ cup minced red onion
8 cloves garlic minced
5-6 anchovies minced
½ cup white wine
¼ cup minced green olives
¼ cup minced kalamata olives
3 tablespoons capers
Couple grinds black pepper
3 cups favorite marinara sauce
2 tablespoons chopped fresh oregano
1 pound angel hair pasta cooked until al dente and drained.
¼ - ½ cup grated Pecorino Romano cheese
Heat oil over medium low heat and add the minced onion, minced garlic, and 2 tablespoons h20. Cook on low until the onions ad garlic are soft about 5 minutes. Then add the anchovies and cook for1 minute stirring often. Pour in the wine and simmer until reduced by ½. Now add the olives and capers and mix well. Grind in the pepper and add the tomato sauce. Simmer gently for 10-15 minutes or until sauce thickens. Stir in chopped oregano. Toss with angle hair past and top with Pecorino Romano cheese.
