Grilled lamb pita:
6 flat pitas
12 ounces of grilled lamb leg sliced
1 romaine heart shredded
4 plum tomatoes
1 red onion sliced
¼ cup kalamata olives
¼ pound feta cheese
FOR THE SAUCE
¼ cup sour cream
Juice of 1 lemon
½ teaspoon celery salt
1 tablespoon tomato paste
First mix together the sauce ingredients and set aside. Lightly toast the pita and place on top of parchment paper. Divide the grilled lamb, shredded lettuce, chopped tomato, olives, and feta cheese over the 6 pita. Drizzle with sauce and roll up in the paper. Serve with a salad on the side.
